Pesto Shrimp with Spinach & Mushrooms

Looking for a quick, tasty, nutritious dinner?  Here’s the answer  – Pesto Shrimp with Spinach and Mushrooms.


1 1/2 pounds fresh spinach

1 lb sliced mushrooms

2 – 3 tablespoons organic basil pesto

1 lb. pre-cooked shrimp, thawed

1 teaspoon olive oil

Heat olive oil in saute pan.  Add sliced mushrooms and spinach.  Saute over low heat until tender.  Stir in 2 – 3 tablespoons of Basil Pesto.  Mix well.  Add Shrimp and simmer until shrimp are heated through, approximately 2-3 minutes.  Serve immediately.  I added sliced tomatoes as a side.
