This soup is easy to prepare and great for busy days, simply brown ground beef, turkey or chicken then place all ingredients in a slow cooker. The taste, and texture of this hearty dish will satisfy every appetite.
1/2 lb lean ground beef ( I have also used ground turkey-if using turkey, be careful to not over cook.)
1 large onion chopped
8 cloves garlic, minced
1 tablespoon freshly minced thyme
1/4 teaspoon red pepper flakes
1 can diced tomatoes with green chili’s
1/2 lb sliced mushrooms
1 1/4 cup 15 bean soup mix (rinse and drain) ( I buy the mix and toss the flavoring packet)
8 cups vegetable or chicken broth
1 bay leaf
Salt and Pepper to taste
Brown ground beef with garlic, onion and red pepper flakes. Drain and dispose of grease. Transfer beef mixture to slow cooker. Add remaining ingredients. Salt and pepper to taste. Set slow cooker to low for 8-10 hours. Discard bay leaves.
