Apple Crisp

INGREDIENTS

Filling:
4 red apples, chopped
1 tsp cinnamon
2 tbsp lemon juice
1/2 tsp lemon zest

Topping:
1 1/2 cup gluten free rolled oats (optional: sub 1/2 cup oats for 1/2 cup almond meal for a more biscuity texture)
1 cup chopped pecans or walnuts
1 tsp cinnamon
1/4 tsp ground nutmeg
5 Dates blended to make a paste.
(You will need to add a bit of water to get the desired consistency.)
1/2 cup shredded coconut (optional)
1/2 tsp ground ginger (optional)

INSTRUCTIONS

1. Preheat oven to 325F. Place the diced apples in a 11×7 baking dish. Add the cinnamon, lemon juice and zest and mix well.

2. In a medium-sized bowl, combine the oats, pecans, coconut, cinnamon, ginger, nutmeg and dates. Mix well, then place on top of the diced apples.

3. Place in the oven and bake for 40-45 minutes, until the top is browned and the apples cooked through. Let sit for 10 minutes at room temperature before serving.
